It's a fun twist on a popular party appetizer (without shelling out on crab), and can make a weeknight salmon dinner way more fun. Pair with a Greek yogurt aioli for dipping and you've got a great high-protein meal ready in no time.
Here's how to make them:
1. In a food processor, pulse 1 pound salmon (cut into chunks), 1/4 cup crumbled feta, 1 tablespoon chopped fresh dill, 1 egg, and 1/4 teaspoon each salt and pepper.
2. Form mixture into eight small patties.
3. Pan-fry patties in a nonstick skillet until cooked through (two to three minutes per side).
